What Are Carbohydrates


Carbohydrates are one of the main types of nutrients. They are the most important source of energy for your body. Your digestive system changes carbohydrates into glucose (blood sugar). Your body uses this sugar for energy for your cells, tissues and organs. It stores any extra sugar in your liver and muscles for when it is needed. Carbohydrates are called simple or complex, depending on their chemical structure.

Types of Carbohydrates

There are three main types of carbohydrate found in food, Starches (also known as complex carbohydrates), Sugars and Fiber.

Starch or amylum is a carbohydrate consisting of a large number of glucose units joined by glycosidic bonds. This polysaccharide is produced by most green plants as an energy store. It is the most common carbohydrate in human diets and is contained in large amounts in staple foods.

Pure starch is a white, tasteless and odorless powder that is insoluble in cold water or alcohol. It consists of two types of molecules: the linear and helical amylose and the branched amylopectin.

Starch is processed to produce many of the sugars in processed foods. Dissolving starch in warm water gives wheatpaste, which can be used as a thickening, stiffening or gluing agent.

Sugar is the generalized name for sweet, short-chain, soluble carbohydrates, many of which are used in food. They are carbohydrates, composed of carbon, hydrogen, and oxygen. There are various types of sugar derived from different sources. 

Simple sugars are called monosaccharides and include glucose (also known as dextrose), fructose and galactose. the sugars maltose, and sucrose are all compound sugars, which are called disaccharides. They are formed by the combination of two monosaccharide molecules with the exclusion of a molecule of water.

Fibre is the substance in certain foods, such as fruit, vegetables, and brown bread, that travels through the body as waste and helps the contents of the bowels to pass through the body easily. Fibre is the part of plants your body cant digest and is essential for a healthy digestive system.
