What is Fat 


Fats are nutrients that give you energy and there are 9 calories in each gram. Fats also help in the absorption of fat-soluble vitamins A, D, E, and K. Fats are either saturated or unsaturated, and most foods with fat have both types. But usually there is more of one kind of fat than the other.

Types Of Fat

Fats can be divided into the following, Saturated Fat, trans Fatty Acids and unsaturated Fat.

Saturated fat is solid at room temperature, which is why it is also known as "solid fat." It is in tropical oils, such as coconut oil, palm oil, and cocoa butter. High amounts of dietary saturated fat is not advised.

Trans fatty acids, more commonly called trans fats, are made by heating liquid vegetable oils in the presence of hydrogen gas and a catalyst, a process called hydrogenation.

Partially hydrogenating vegetable oils makes them more stable and less likely to become rancid. This process also converts the oil into a solid, which makes them function as margarine or shortening.

Partially hydrogenated oils can withstand repeated heating without breaking down, making them ideal for frying fast foods.

For these reasons, partially hydrogenated oils became a mainstay in restaurants and the food industry – for frying, baked goods, and processed snack foods and margarine.

Trans fats are worse for cholesterol levels than saturated fats because they:

Raise bad LDL and lower good HDL

Create inflammation, which is a reaction related to immunity and has been implicated in heart disease, stroke, diabetes, and other chronic conditions.

Contribute to insulin resistance

Can have harmful health effects even in small amounts – for each additional 2 percent of calories from trans fat consumed daily, the risk of coronary heart disease increases by 23 percent.

Unsaturated fats

Unsaturated fats, which are liquid at room temperature, are considered beneficial fats because they can improve blood cholesterol levels, ease inflammation, stabilize heart rhythms, and play a number of other beneficial roles. Unsaturated fats are predominantly found in foods from plants, such as vegetable oils, nuts, and seeds.

There are two types of “good” unsaturated fats, monounsaturated fat and polyunsaturated fat.

Monounsaturated fats help protect our hearts by maintaining levels of HDL cholesterol while reducing levels of LDL cholesterol.

Polyunsaturated fats can help lower the level of LDL cholesterol. Replacing saturated fats with polyunsaturated fats may also help reduce triglyceride levels.

There are two types of polyunsaturated fats: omega-3 and omega-6. Omega-3 and omega-6 fats cannot be made by the body and are therefore essential in small amounts in the diet.

Omega7 fatty acids are a class of unsaturated fatty acids in which the site of unsaturation is seven carbon atoms from the end of the carbon chain. The two most common omega-7 fatty acids in nature are palmitoleic acid and vaccenic acid.

Omega 9 fatty acids can be made by the body and found in unsaturated fats, types of omega 9 are oleic acid, elaidic acid, gondoic acid, mead acid, erucic acid, nervonic acid.
